Carnal Chocolates needs your help to up level! | An organic, fair-trade, artisan chocolates company looking for assistance with equipment needs.
In May of 2016, Carnal Chocolates was birthed. I leveraged my 20 year experience in branding and graphic design to create a truly memorable packing experience. I brought on board my business partner, Gin, former bakery owner and financial business professional. Together we share a passion to bring nourishment consciousness back to the public through chocolate and caramel that will leave you speechless. We use organic and sustainable ingredients – caring about where every single ingredient comes from and how that impacts the planet. It is amazing to really take in that for a year and half we have been able to successfully provide the public with unforgettable artisanal chocolates and caramels.
Carnal is a small-batch truffle and caramel company dedicated to sustainable, organic ingredients. All of our chocolates are made with 70% fair-trade, organic, dark chocolate. Small batches are hand stirred, hand cut and hand dipped. We make classic flavors like peppermint ganache and toasted coconut in butter caramel. And we add some flair with Pining for My Honey…a layer of caramel with roasted pinenuts, honey and some lavender. Or Snap My Ginger, a brown sugar caramel infused with organic ginger and enrobed in dark chocolate. Those are only a few of our flavors. When it comes to caramel – we go all out! No corn syrup. In fact no preservatives period. Our food is fresh, organic, thoughtfully sourced and filled with the energy of love.
As our clientele has grown, we have reached the capacity of what we can produce without equipment. This equipment would let us grow our offerings and cut our production time in half.
We are looking to raise $3000.
For what you say? First, a chocolate tempering machine (ChocoVision Revolation V Chocolate Tempering Machine, 9 lb. Capacity $1588 – $1700).
What is tempering and why do I care? Okay, quick science lesson. Ever open a chocolate bar and it had grey spots? It doesn’t mean it’s bad, it’s just “bloomed”.
“Tempering chocolate is an essential step for making smooth, glossy, evenly colored coating for dipped chocolates. Tempering prevents the dull grayish color and waxy texture that happens when the cocoa fat separates out. Tempered chocolate produces a crisp, satisfying snap when you bite into it. The objective in tempering melted chocolate is to entice the disparate fatty acid crystals of cocoa butter back into one stable form through heating and cooling periods.”
This handy machine does just that…so instead of hand stirring for hours and guarding the heat fluctuations, we can just focus on making more scrumptious truffles!
The second piece of equipment is an attachment piece to the magical tempering machine. (Chocolate Dispensing Attachment $650 – $780).
This piece allows the tempered chocolate to pour, like a fountain, and flow back into the tempering bowl. Why is this such a luxury? Currently we are only able to enrobe two truffles or caramels at at time (enrobing is the process of coating that silky ganache with a hard chocolate coating so you don’t have to get your hands messy). Yep you read that correctly, two. This handy spout will allow us to enrobe close to 20 at a time. Can you imagine the time saved? It would also allow one of us to go through the entire chocolate making production instead of both of us. Making our time that much more efficient. Which is why we are so excited about this campaign.
If we are graced with more funds than expected, we wish to grow our inventory of caramel pots. We currently have one. These 12 qt stock pots are expensive for a small growing chocolate company; between $75 and $200 for a thick bottom, even heat distribution, stainless steel vessel that helps us make the magical caramel so many of you have proclaimed the best caramel you’ve ever tasted. The addition of three more pots would allow us to make more batches at once!
These three items will be a game changer for us.
If this is not for you, no problem! Share our message if you can, with people you think would be interested in our endeavor. Or just send us some good juju!
