Help us open Hannyatou Sake Bar and Retail! | Chef Mutsuko Soma of Kamonegi is opening sister bar Hannyatou. Help us build this space!
After a successful first year at lauded soba restaurant Kamonegi, Chef Mutsuko Soma and fellow sake sommelier Russell King will open Hannyatou, a sake bar and retail shop to highlight unique, specialized sake along with promoting sake education and enjoyment in Seattle. Hannyatou will also boast a bar menu highlighting traditional fermentation techniques that have been practiced for generations, creating seasonal small dishes meant to enhance the sake experience. Hannyatou will open in the former Lama G Cafe space, two doors down from Kamonegi, and will seat about 20 people along with additional patio seating in the Spring and Summer months.
What We Need & What You Get
We’re happy to announce that we have secured the Hannyatou space, one close enough to Kamonegi with hopes of providing a different experience and perhaps a waiting spot to enjoy small bites and sake before securing your table at Kamonegi. Your support will help provide funds to fix up the intimate patio space for the Spring and Summer months and renovate the space. Hannyatou is a small space, and we hope to install an awning or shade over the patio and purchase heat lamps so we can continue to utilize the space on fair weather days; sounds crazy, but there’s nothing quite like sake on a grey drizzly day.
In the last few years, the enjoyment and production of sake in western markets have grown exponentially making sake a top contender with other spirits and even wine in restaurants. Such growth has led to more local sake brewers and a diverse array of sake being introduced to western markets. Despite its growing popularity, we are still limited in places and retail options where one can obtain and experience a wide range of sakes from the classic, clean Junmai Daigingo to more eccentric varieties utilizing new rice strains or varietal flower yeasts. We aim to provide a space through Hannyatou for producers and brewers to showcase new products and for guests grow from casual sake drinkers to true enthusiasts.
Risks & Challenges
While restaurant and bar openings are always a challenging endeavor, we ask for your support to minimize our risk. Your support will be an added safeguard that will allow us to address all necessary changes to the space, which may otherwise have to address gradually as we acquire the funds. What this means is that we will be able to start work on the most challenging aspects of the space which includes clean up, renovation, and weather proofing of our space and patio. This head start, particularly in our first year of opening, will lend to our success, longevity, and greater ability to service the local community.
