Le Mu – An Introduction

“Le Mu” -> “The Pig”

Le – The French word for the article “the”

Mu – The Laotian word for “pig”

“Mu” is particularly special because it was Chef Sav’s epithet growing up; his family lovingly referred to him as “little pig”. While the name “pig” may sound insulting or harsh to an American ear, in Laotian culture it is held as a term of endearment.

Meet Chef Sav

  • Head Chef and Co-Owner
  • Classical French Training at the Culinary Institute of Virginia
  • 1st Generation American
    • Born in New York
    • Raised in Virginia (a true Southern boy at heart)
  • Laotian-American Eats; A unique blend of multiple influences
    • Growing up in a home with Laotian-immigrant parents who love to cook and do so very well
    • Integrating Southern foods and cooking techniques
    • Devoting personal time to culinary growth; learning new styles of cooking and studying other culture’s cuisines

Meet Elise. “Mrs. Le Mu”

  • Front of House Operations and Co-Owner
  • Local Woman
    • Born of generations of local Mainers (Greenwood, Bryant Pond, Sumner, Norway)
    • Daughter of an Army soldier – Grew up on military bases all over the United States and Germany
  • A knack for connecting with people and providing excellent customer service
    • Background in Social Work; many social work skills translating easily to the world of service
      • Ability to operate effectively under stress
      • Genuinely interested in the way people experience the world and are connected to each other
    • Highly organized
    • Runs all social media accounts

The Humble Red Shack

  • Previously the Domain of Luchador Tacos
    • This business was able to acquire enough success to transition into a brick-and-mortar establishment, leaving the humble red shack available for another entrepreneur to chase their dream
  • The Humble Red Shack Transformed to The Charming Blue Shanty
    • Le Mu Enters
      •  Serving Chef Sav’s unique Laotian-American vittles
      • A face-lift to afford a fresh start for the small facility
      • New equipment to serve the needs of a Le Mu Menu

 

Community

  • We love to support local business
    • Get our meat and produce from local farmers; using native Maine foods and organic products
    • Collaborate with local farms and other small businesses to provide small dining events and support community endeavors
  • Making a smaller footprint
    • Compost food scraps
    • Using recycled or biodegradable to-go items
    • Findings ways to incorporate local and organic foods into our menu

Le Mu Eats Needs New Equipment

We are seeking $7,000 to get us started in the new Le Mu Eats kitchen. Here is a break-down of what we are in need of;

Kitchen Equipment

It’s no surprise that a food venue needs kitchen equipment to serve you beautiful people! Help us with this large investment through donating to this fundraiser or by sending us links to good deals you find on used equipment at [email protected]

  • Refrigerator
    • Must fit in a space 46″ wide x 80″ high x 32″ deep
  • Sandwich station
    • 48″
  • Counter Top Deep Fryer
    • Space available is up to 26″
    • Ideally gas
  • Various Pots, Pans and Utensils
    • Reach out to us if you think you have something we could use
  • Additional Hood
    • There is currently one small hood in the Shanty and we plan to install an identical one right next to it
